Arriving in 1998, Bertrand and Nathalie have followed in the footsteps of Georges & Geneviève Jallerat who created, since 1968, what marks the spirit of the Grand Monarque: the elegance of a beautiful provincial house and the authenticity of true French cuisine.
Upon their arrival, strong of this heritage, they did not go back on anything but instil a more contemporary spirit, creating first in 1999 a bistrot in which the mischievous dishes, served with wine by the glass, open the doors of the house to a new clientele.
Then the gastronomic restaurant is lifted, by its elegant decor and thanks to a team that cooks with its time, ranked with the 2009 starred Guide Michelin restaurants. In the meantime, the bistrot moved to the « Cour » (courtyard), an elegant patio with a cut stone decor and an old-fashioned glass roof that allows, during sunny days, to have lunch or dinner under an open sky. Then, the Madrigal, fully decorated by Nathalie, once more becomes the popular bar for Chartres and Beauce’s inhabitants, in a lounge, cosy and chic ambiance that allows having a drink while listening to a jazz session.
All the while creating these new locations that redefine a French lifestyle tinted with modernity, Bertrand and Nathalie have not forgotten to cultivate the strong points of the house: an exceptional cellar, the themed nights that reunite winemakers & the accustomed, musicians & out of town visitors, during exceptional weekends.
Lastly, in 2010, they both created a spa of more than 850 m² in the heart of the establishment so as to satisfy a clientele always more international and more demanding.
This dynamism, this permanent curiosity for what the high gastronomy and French hospitality can best offer, this love for the vine and the conviviality: that is the Jallerat spirit.
